Everyday Salad Dressing

Make in a 1qt Mason jar, mix and match the varying ingredients to make your own concoction, the possibilities are endless.
2 heads smashed garlic
1/4 cup vinegar (This can be any vinegar that you like. We make it with red wine or Champagne vinegar. We have made it with 1/2 and 1/2 red wine and balsamic.)
1/2 cup extra virgin olive oil
2 Tbsp. mustard (Ground, yellow, Dijon or whole grain you choose. We use Dijon for the heat.)
1 Tbsp. sweetener (Agave nectar, honey, maple syrup... no white sugar.)
2 to 4 Tbsp. water or fruit juice (Orange, grapefruit, apple, lime, lemon...how about pomegranate? The addition of water or juice will alter the acidity. Water or a sweet juice will lower the acidity, citrus fruits will increase the acidity.)
Fresh cracked black pepper to taste, as much as you can handle.
Fresh herbs (Mint, rosemary, chive or parsley. Thyme, sage or tarragon. If you don't like fresh herbs leave them out.)
Put all of these items together in a mason jar, shake like crazy and it's ready to eat.

Faux-Noodle Soup

Brown 6oz chicken meat in a large heavy pot. (Smash 2 cloves garlic and 1/2 tsp. of ginger, hold onto these two till later)
While browning
Thinly Slice 1/4 head green cabbage (these will be your noodles)
Julienne 1/2 red pepper
Julienne 1/2 red onion
Julianne 1/2 zucchini
Shred 1/2 large carrot
When chicken is completely brown remove from pot, turn the temperature to a moderately high heat and add the vegetables above, lightly salt and pepper, stir occasionally.
While veg is cooking. Cut firm or super firm tofu into 1/2" cubes. Slice two green onions thin and chop 2 Tbsp. cilantro. Set aside. Shred chicken.
When vegetables become limp, add garlic and ginger from before, stir for 10-15 seconds. Next add 4 cups of low sodium chicken broth and a tbsp. of honey. Bring to boil. When it comes to the boil shut off completely, add remaining ingredients and let sit for 5 minutes, squeeze 1 whole lime in soup and a tbsp. or two of soy sauce. it's done. Now eat!
Extras: you can finish with Siriacha if you want it to be spicy.

Italian Green Beans

2 Cups Prepared green beans (cut in 2" pieces)
2 cloves minced garlic
EVOO (Extra Virgin Olive Oil)
Italian Seasonings
Salt and Pepper
Toasted Almonds
Preparation:
Cover bottom of a skillet with EVOO. Saute garlic for 1 minute. Add beans and sauté on low heat for 20 minutes. Add Italian seasonings, salt, and pepper to taste. Top with toasted almonds.

Tofu Tacos

1 Poblano Pepper (Julienne)
1 Red Pepper or Yellow Pepper (Julienne)
2 Ears of Corn (Cut off the cob)
1 Zucchini (Seared and Sliced)
1 Red Onion (Julienne)
2 Cloves Garlic (Smashed)
1lb Tofu (Cut into whatever size you want)
1 Lime (Juiced)
¼tsp Cumin
½tsp Chili Powder
Salt
Pepper
On the Sides
2 Ripe Tomato (Large Diced; place in bowl, add salt, pepper and agave syrup. Use as garnish)
2 Avocado (Smashed with lime juice, salt, pepper and agave syrup)
1lb Queso Fresco or whatever shredded cheese you like
Romaine leaves, washed and dried, we use these as our tortilla.
6"Corn tortilla, baked in oven @ 350 degrees until crispy.
Method of Preparation
Sauté the first 5 ingredients just until they begin to get soft. Add garlic, cook 20 seconds. Add tofu, cook 1 minute. Turn off heat, add lime juice and seasonings. Eat.
