Everyday Salad Dressing

Make in a 1qt Mason jar, mix and match the varying ingredients to make your own concoction, the possibilities are endless.

2 heads smashed garlic
1/4 cup vinegar (This can be any vinegar that you like. We make it with red wine or Champagne vinegar. We have made it with 1/2 and 1/2 red wine and balsamic.)
1/2 cup extra virgin olive oil
2 Tbsp. mustard (Ground, yellow, Dijon or whole grain you choose. We use Dijon for the heat.)
1 Tbsp. sweetener (Agave nectar, honey, maple syrup... no white sugar.)
2 to 4 Tbsp. water or fruit juice (Orange, grapefruit, apple, lime, about pomegranate? The addition of water or juice will alter the acidity. Water or a sweet juice will lower the acidity, citrus fruits will increase the acidity.)
Fresh cracked black pepper to taste, as much as you can handle.
Fresh herbs (Mint, rosemary, chive or parsley. Thyme, sage or tarragon. If you don't like fresh herbs leave them out.)
Put all of these items together in a mason jar, shake like crazy and it's ready to eat.
